Ingredients
Butter | 25 gm | 50 gm |
Oil | ½ tbsp | 1 tbsp |
Leeks, sliced | 4 | 6-8 |
Thyme sprigs | ||
Wine, white | 2 tbsp | 4 tbsp |
Chicken breast, skinless, boneless | 2 | 4 |
Salt & pepper | ||
Pancetta slices | 6 | 12 |
Method
Heat the butter and oil in the Remoska and when melted, add the leeks and thyme sprigs
Cook in the Remoska for 15 minutes until softened
Stir in the wine
Season the chicken with salt and pepper
Lay 3 pancetta slices on a work surface and place a chicken breast on top.
Wrap the pancetta around the chicken
Repeat with the rest of the pancetta and chicken
Put the wrapped chicken on top of the leeks and baste with some of the buttery leek juices
Cook in the Remoska for approximately 20-30 minutes (depending on the thickness of the chicken breasts) until the chicken is cooked.
