This recipe takes 60 minutes to prepare and serves 4 people.
Ingredients
To make the pudding, you will need 575 ml of water, 200 g of dried dates, 1 tsp of baking powder, 100 g of butter, 150 g of caster sugar, 3 beaten eggs, 125 g of self-raising flour, and 1 tsp of mixed spice.
For the sauce, you will need the following:
- 100 g light muscovado sugar
- 100 g butter
- 100 g golden syrup
- 300 ml double cream
- 3 drops of vanilla essence
Method
First, in a separate bowl, chop the dates and pour boiling water over them, then leave the mixture to cool. Next, beat the butter and sugar together until it is light and fluffy. Gradually beat in the eggs. After that, fold in the sieved flour, baking powder, and mixed spice. Finally, stir in the soaked dates and pour the mixture into the Remoska. Cook for approximately 40 minutes, until the pudding is browned and firm to the touch.
To prepare the sauce, put all the sauce ingredients in a pan over low heat and stir until the sugar has dissolved. Then, add the cream and simmer while stirring until it turns golden brown.
To serve the pudding, cut it into wedges and serve it with the warm sauce.
