What you’ll need:
For the meatballs:
• 500 – 750 gr lean beef mince
• 1 cup breadcrumbs
• 1 tsp dried Italian herbs
• 1 clove garlic, minced
• 1 onion, grated
• 1 tomato, finely chopped
• 1 egg
• Salt and pepper, to taste

For the sauce:
• 2 Tbsp sunflower oil
• 1 onion, chopped
• 1 leek, chopped
• 2 carrots, chopped
• 1 cup red wine (optional)
• 1 litre beef stock
• 12 baby potatoes
• 2 cloves garlic, chopped
• 1 tsp dried Italian herbs
• Salt and freshly milled black pepper
• 1 leafy cabbage (for wrapping)

How to make it

Mix all the meatball ingredients in a large bowl, preferably by hand, and then form small meatballs. Refrigerate these while you continue with the sauce.

In a really large cast-iron pot, heat the oil and gently sauté the onion, leek and carrots. To soften the cabbage, either soak it in hot water for 10 minutes, or steam it – this will help when using the leaves to make the meat parcels. Gently remove leaves from the cabbage, and wrap each meatball individually. Arrange all the parcels on top of the sautéed onion mixture. Add the wine, if using, and simmer for a few minutes. Cooking removes the alcohol from the wine, but retains its flavour and rich colour. Shred the remaining cabbage and add it to the pot. Now add the remaining ingredients: baby potatoes, garlic, herbs, and beef stock. Simmer on low heat for about an hour. Test for flavour and add salt and pepper according to taste.

TIP: If the sauce seems a little thin, mix a tablespoon of cornflour to a paste with a little cold water and add it to thicken.
