Thai-Style Chicken Soup for the soul

This scrumptious Thai-style soup is perfect to warm away the winter blues. It’s delicious and very easy to put together. With some left over cooked chicken and a few other ingredients you’re well on your way to a delicious soup. The ingredients below are for the Standard Remoska and serve 1 person. Increase quantities to serve more guests.

Ingredients:
1 clove of garlic
Fresh ginger (about an inch)
Fresh turmeric (half an inch)
Spring onions (1 little one including the green part)
1 large hot chilli pepper
A handful of finely shredded cabbage
200ml coconut milk
300 – 400 ml water
Half chicken stock cube
Cooked chicken shredded or cubed

 


Method
In a cold Remoska add I tsp of coconut or olive oil, add the chopped garlic, ginger, onions, chilli pepper and turmeric. Saute for about 15 mins, then add the cabbage. Cook for another 3-5 mins. Next, pour in water and coconut milk and cooked chicken and cook for another 10 mins. Season to taste and add some chopped basil and parsley – enjoy!
