Fruit Cake in the Remoska



220 gm Self-Raising flour

110 gm Unsalted Butter

110 gm White Sugar

200 gm Dried Mixed fruit

1 tsp Mixed Spice

1 Egg

5 Tablespoons of Milk



Rub the flour and unsalted butter together until they are like breadcrumbs.

Add the sugar, mixed fruit, spice, egg and milk and mix all together until dropping consistency. Add more milk if necessary.

Place the mixture in a paper case inside a cake tin.

Sprinkle a tablespoon of light brown sugar on top and press with the back of a spoon.

Place the tin into a cold Remoska. Switch on the Remoska and cook uncovered for 25 minutes, until a skin starts to form.

Cover with aluminium foil and cook for another 30-35 minutes.

Continue cooking until a toothpick comes out clean in the centre.
