    Tomato chicken potjie

    [li]4 chicken drumsticks and 4 thighs, skin on[/li]
    [li]2 onions, chopped[/li]
    [li]2 green peppers, chopped[/li]
    [li]3 cans tomato paste[/li]
    [li]Sliced cheese (cheddar or gouda)[/li]
    [li]Potatoes (for mash)[/li]


    [li]Peel the potatoes, cook until soft, and mash them with milk, butter and salt to taste.[/li]
    [li]Heat some olive oil in a potjie and fry the chicken pieces until the skin is light brown, then remove them from the pot. Do this in batches for the best results.[/li]
    [li]Now fry the onions and green pepper together.[/li]
    [li]When the onions are glassy, add the tomato paste. (((Some of it? See next instruction)))[/li]
    [li]Cover the chicken pieces completely in tomato paste, and add to the potjie.[/li]
    [li]Cover the potjie and cook for 40 minutes, stirring occasionally. Maintain enough coals to keep the mixture simmering.[/li]
    [li]Just before serving, cover the mixture in slices of cheese and allow this to melt.[/li]
