Hi all
Remember the Cobb cooker that I bought for R100???? (Wat's cost R1000.00 in the super spend mega expensive store?)
Well mees a used it, an boy what a treat!
Cobb prep
Thorough spray all over with Spray & Cook
12 Briketts (you don’t need the Cobb fuel it be darned expensive)
1strip fire-lighters
Light the Cobb (outside), place the brikett basket over the flames & wait the mandatory 20min ‘till the briketts go white
In da mean time
Food prep
+- 1,6Kg pork roast
Cut off the skin and with a scizzors & cut into finger size pieces
Rub a little oil onto the roast (to keep the spices on the roast)
Cut a few times deeply (but not right through) into the roast on both sides with a sharp knife
Put garlic / spices / lemon juice into the cuts
Rub spices over the outside
Place on rack, clip rack into base plate & put the skin strips fatty side up – skin side down on the rack around the roast (it gonna be scrumptious crackling)
Rough cut up 2 onions
Roast potatoes
Stab with a fork all over (5 medium ones seems to fit nice)
Cut lengthwise almost through and split apart
Salt / pepper / garlic & a BIG dollop of margarine
Wrap in foil
Carefully pour +- 1 cup of beer (a Black is best) in the moat and put the onions in
Season with garlic / lemon juce
Put the roast on the Cobb base
Pour a little beer on the top (soas it goes into the cuts)
Place the potatoes around the top (above the moat)
Close & leave for 3/4H
Open, check & replenish the beer in the moat, stir put the roast back & turn over pour beer over the top
Close dome and leave for 3/4H
Take off the potatoes
Repeat the roast thing until crackling is crisp, roast is done and beer is finished, (no drinking allowed) put potatoes back until hot to touch
Scoop out the onions / beer / out of the moat & thicken liquid for yummy yummy gravey
